Today there’s on off rain so we can’t really go out to the park or anything. I decided to make cupcakes because they’re really easy and taste great!
– 110g butter ( or margarine )
– 110g caster sugar
– 2 eggs
– 1tsp vanilla extract
– 110g self rasing flour
– 1-2 tsbp of milk
for the buttercream icing:
– 140g butter
– 280g icing sugar
– 1-2 tbsp milk
– food colouring of your choice
1- preheat your oven to 180•c and line a muffin tray with paper cases (12).
2- cream butter and sugar together until completely mixed, then add eggs and vanilla extract.
3- fold in the flour and then add a little but of milk until the mixture drops off your spoon ( or fork )
4- spoon the mixture into your cases and bake for 10-15 minutes ( mine were in for 12 )
5- whilst your cupcakes are cooling combine the butter and icing sugar together until smooth. Then if you want to, add in the food colouring but only one small drop as it is very strong. Mix until completely combined. You can also add a little bit of milk to get a creamier icing.
6- wait until your cakes are completely cooled ( if not your icing will melt on them ) then you can either pipe the icing on to your cakes or spoon it on top and smooth it over.
7- you can add sprinkles. I had a few butterfly ones left so I used those and they looked very cute.
